  • 8 lamb chops (or 4 thick slices of leg of lamb)

Method

Bring the cider vinegar and water to the boil. Add the sugar, pepper and the mint. Boil for a further 3 minutes or until the liquid is well reduced.

Now simply oil the chops, seal them quickly for 2 minutes on each side, then using the trusty basting brush paint on the mint sauce. Cook for a further 8-10 minutes depending on your taste, turning occasionally and adding more of the mint s
