  • 8 lamb cutlets
  • 4 oz (110 g) softened butter
  • 2

Method

Put ¾ of the butter into a dish with the parsley and a little salt and pepper. Now finely grate the skin of 1 orange and mix into the butter and parsley. Use the juice of this orange to marinate the chops for 1 hour.

Butter the chops with the remaining butter and cook for 4 minutes on each side. Pop a knob of orange butter on each chop and continue cooking till the butter threatens to f
