This crispy, crackly feast will cause you all sorts of trouble if you are not patient. Make sure that your fire is well maintained, the beast frequently turned and basted and that you cook it for long enough - which in the event is bound to be longer than you or the recipe thinks! I should lay on a barrel of cider or beer for the cook, and let the guests drink what’s left.
