Ingredients

  • 2 lb (900 g) boned and rolled loin of pork with rind off
  • 6 cloves

Method

Spike the meat with the cloves and put it onto the spit and secure well.

Mix all the basting ingredients together in a bowl and paint the joint. Cook for about 1 hour, basting all the while. Serve with a purée of celeriac.
