  • 4 lb (1.8 kg) loin of pork
  • 1 sprig of fresh rosemary, l

Method

Mix the chopped rosemary and garlic with a teaspoon of salt and lots of pepper.

Make holes in the meat with a small sharp knife - getting as close as possible to the bone. Put some of the rosemary and garlic mix into the holes and season the meat well.
