  • lb (550 g) pork, cut into 1 in (2.5 cm) cubes

Method

Crush the peppercorns into a paste and mix in the Cognac. Stir in the pork and bacon pieces and leave to marinate for at least 2 hours.

Thread onto skewers and cook for about 12 minutes, turning and basting frequently. Season with salt and serve with rice.
