The difficulty with this simple and delicious meal is in obtaining cooked pigs’ trotters, or calves’ feet for that matter, and I think it hardly worth buying 2 pigs’ trotters to simmer for hours in preparation for this exquisite little snack. So use a butcher who cooks his own hams etc, and ask him to provide you with a couple of cooked ones for next week.
