  • 12 very thin slices of calf’s liver
  • Salt and pepper
  • 24 fresh sage leaves

Method

I hope that the mathematics of this excellent dish won’t confuse you. First cut the liver slices in half, lay each piece flat and sprinkle with salt and pepper. Then lay a fresh sage leaf on each piece and roll the liver into a tight sausage shape.

Next cut the bananas into 24 discs and thread the liver and banana alternately onto 8 skewers and paint them with the lemon juice (especiall
