Ingredients

  • 1 lb (450 g) veal or lamb’s liver, cut into 1 in (2.5 cm) cubes

Method

Thread the ingredients onto 4 skewers and paint with oil and sprinkle with pepper.

Grill for about 15 minutes, turning and basting frequently. Serve with grated potatoes, fried in butter till golden but still slightly crunchy, and barbecue sauce.
