Chicken Liver Kebabs with Madeira

Ingredients

  • 1 lb (450 g) chicken livers
  • Salt
  • 1 lemon

Method

Mix the marinade ingredients together, and leave the chicken livers in the marinade for at least 1 hour before carefully threading onto 4 skewers.

Grill them for 3-4 minutes, turning frequently until they are slightly crisp on the outside and pink in the middle. Season with salt and serve with quarters of lemon, melted butter and rice.
