Calf’s Kidneys with Prunes

Ingredients

  • 2 calf’s kidneys
  • 2 tablespoons vinegar
  • 16 prunes

Method

Halve the kidneys and remove the core of fat. Put the kidneys into a bowl of water, add the vinegar and leave for 5 minutes. Rinse and dry the kidneys with kitchen paper. Cut them into 24 pieces.

Soak the prunes for about 20 minutes in warm water. Remove the stones and wrap each one in a slice of bacon. Then, beginning and ending with a piece of kidney, thread the kidney pieces and prun
