  • 1 lb (450 g) veal sweetbreads
  • Juice of 1 lemon</

Method

Cover the sweetbreads with the lemon juice and salted cold water for 20 minutes. Then peel off the membrane and any traces of blood etc. Dry them and cut them into cubes about the same size as the mushrooms.
