  • 1 × 4 lb (1.8 kg) chicken
  • 2 teaspoons salt

Method

Rub the cavity of the chicken with salt and put the apple and celery leaves into it. Sew up the cavity with string and a skewer.

Fasten the neck skin to the skewer and tie the wings to the body. Insert a spit through the chicken and fix securely.

Cook the chicken for at least 1½ hours, or until the skin is brown and crispy and beginning to split. Baste regularly with the lemon s
