Starting and ending with the chicken, arrange two chicken pieces and one piece each of liver, leek, onion and pepper onto oiled skewers.
Put the garlic, soy sauce, sherry, sake, sugar and cayenne pepper into a saucepan and bring to the boil. Pour over the skewered chicken and allow to marinate for about an hour.
