This exquisitely simple dish should be prepared on one of those fine autumnal Sunday mornings when, clad in your green wellies and Barbour coat, you are tidying up the garden at the back end of the season. And instead of rushing to the pub after a morning’s exercise, use the twigs and prunings of your fruit trees to make a fire. Imagine what the neighbours will think as you sit on your terrace amidst the apple-scented smoke spiralling upwards.
