Method

Marinate the cubed venison for at least 2 hours.

Wrap each apricot with smoked bacon and the venison with half a slice of speck. Thread onto four skewers.

Place a drip tray under the kebabs with the strained marinade and the juice from the apricots in it. Cook the kebabs for 15 minutes, gently so that the bacon does not burn before the meat is cooked, turning from time to time.
