A brilliant but simple way to eat aubergines is to grill them whole and unpeeled for about 20 minutes, turning them from time to time until their skin is black and they are very soft and squidgy. Then all you do is cut them in half and with a teaspoon mash in some olive oil, salt and pepper and spoon out the flesh rather as you would with an avocado pear.
