  • 1 egg yolk (at room temperature)
  • 1 teaspoon mustard
  • 6 fl oz (

Method

In a bowl mix the egg yolk and mustard together with a wooden spoon. Keep stirring while you add the oil in a thin stream until you have the right consistency. Stir in the vinegar and salt and pepper.
