Crush the garlic into a pestle and mortar; then, with a whisk, stir in the egg yolks. Drizzle the olive oil in, stirring constantly, until you have a thick yellow mayonnaise. Stir in the lemon juice and add salt and pepper to taste.
Alternatively, put all the ingredients except the olive oil into a food processor or liquidiser, turn on and drizzle in the oil. This method is not as good
