It is always hard to get that sweet sunshine feeling of super-ripe tomatoes into dishes like Spaghetti Bolognaise, a tomato omelette, or just a plate of fresh pasta or a pizza in the middle of winter, when tomatoes are hard and tasteless. So, puréed tomatoes preserved in the height of summer are a useful ingredient for many winter dishes.
