This will only work brilliantly if you really do use best-quality ingredients – it will be grim if you use corn oil and Cheddar cheese, for example.

Ingredients

  • 2 lb (1 kg) tomatoes, some very ripe, some a little green, thinly sliced

Method

Put all the ingredients into a large salad bowl, mix carefully so that you don’t damage the tomatoes, and refrigerate for at least 1 hour. Toss gently again before serving.
