Method

Combine all the marinade ingredients and marinate the meat for at least 12 hours. Drain and fry in the butter and lard in a large casserole until brown. Add the red wine, a glass of the marinade and enough water to cover the meat. Cook for 1¾ hours, adding more marinade if necessary.
