This is one of the great country dishes of France – rich, filling and delicious, and fatty. It’s great for a winter party of at least eight people, and because acquiring the ingredients and the cooking are fairly time-consuming, I see no reason why you should not prepare this dish well in advance and at your leisure and, dare I say it, freeze it for eating later.
