As a kid my favourite stolen midnight snack was a beetroot sandwich (home-grown and preserved beetroot, of course). And baby beetroot, boiled in the skin, peeled and sautéed briefly in butter, makes a fabulous accompaniment to a joint of roast pork or chicken. So why not a beetroot sauce? It’s really good. And it’s also the dreaded Nouvelle Cuisine!!
