This dish truly takes us from the ridiculous to the sublime. Just imagine the frozen smiles of appreciation on the well-preserved faces of your friends when, delicately wiping an imaginary morsel from the corner of their mouth with one of your finest napkins, they say, ‘Delicious, darling. What was it?’

And you tell them.

But I do not jest. This is a quite delicious dish and, if you will pardon the mixed metaphor and pun, it really is making a silk purse out of a sow’s ear.<
