  • 1 lb (500 g) flour, sifted

Method

Put the flour into a bowl and make a well in the centre. Add the egg, salt, oil and enough water to make a soft dough. With your fingertips, carefully incorporate the flour, little by little. Thoroughly knead the dough on a floured surface. Beat it with a rolling pin and throw it down several times. When the pastry is quite smooth and stretches without cracking, it is ready. Roll it up, oil it
