Line a pie or flan dish with the pastry and prick the bottom all over with a fork. Sprinkle with the granulated sugar. Arrange the plums in concentric circles and pop into a hot oven, gas mark 6, 400°F (200°C), for 25 minutes. Allow to cool, then dust with caster sugar.
