Separate the eggs. Put the chocolate in a mixing bowl over a pan of simmering water. When it has melted, whisk in the butter, sugar and vanilla sugar, egg yolks and ground almonds. Next add the potato flour and fold in the egg whites, stiffly beaten.
Pour the mixture into a buttered shallow tart tin and bake in the oven at gas mark 5, 375°F (190°C), for about 40 minutes. Let the cake co
