Ingredients: 2 oz (50 g) fresh white breadcrumbs; 2–3 oz (50-75 g) chopped parsley; Parsley sprigs and lemon slices to garnish; 4 oz (125 g) grated cheese; 1½ oz (40 g) melted butter; Breadcrumbs and grated cheese to coat; Salt and pepper; 1 egg, lightly beaten; Seasoned flour; Lemon juice; 4 haddock fillets

Method

Pre-heat the oven to gas mark 5, 375°F (190°C).

Wipe the fish fillets, sprinkle with lemon juice and dust with seasoned flour.

To make the stuffing, mix the grated cheese with the breadcrumbs and parsley; bind with the egg and season with salt and pepper. Divide into fo
