Ingredients

  • 2 lb (1 kg) whitebait
  • Milk
  • 2 oz (50 g) seasoned flour Fat or oil for deep-frying
  • 1 teaspoon cayenne pepper

Method

Wash and carefully dry the whitebait, then dip them in the milk and coat with seasoned flour. Deep-fry in hot fat or oil until crisp and sprinkle with cayenne before serving.
