The combination of mackerel – fried, grilled or roasted – and gooseberry sauce is reputed to have been brought to England at the time of the Norman conquest.



Gut and clean the fish and place in a buttered ovenproof dish. Season with salt and pepper and dot with butter. Cover with buttered greaseproof paper or foil and bake in the oven at gas mark 4, 350°F (180°C), for 20 to 30 minutes. Remove from the oven; split the mackerel and remove the backbones. Serve with hot gooseberry sauce and small new potatoes.
