Groats are unprocessed oats. They look like bird seed, and can be bought from pet shops and health food shops.

Ingredients

  • 1 lb (500 g) groats, soaked in water overnight and drained
  • 2 lb (

Method

Cook the groats in fresh water, for about one hour and then cool. Mix together the pork, groats and salt and pepper. Stuff into the sausage skins and tie into rings. Boil for approximately 30 minutes.

To serve, grill, fry or bake in the oven at gas mark 5, 375°F (190°C), until the skins are brown and crispy.
