  • 3 lb (1.5 kg) strong plain flour
  • 3–4 teaspoons salt

Method

Sift the flour and salt together into a large bowl and rub in the lard with the fingertips. In a small bowl blend the yeast with 10 fl oz (300 ml) of the water. Make a well in the centre of the flour mixtu
