Buttermilk or whey are excellent substitutes for sour milk in this recipe.

  • 1 lb (500 g) wholemeal flour
  • 5 oz (150

Method

Mix the dry ingredients very well. Moisten with the sour milk to form a soft dough. Knead lightly. Form into a round, mark with a cross and bake for 30×45 minutes in the oven at gas mark 7, 425°F (220°C).
