This is the sort of pastry that you will use to make your raised pies. Work with it while still warm to line your dish, or shape it around a Kilner jar.

Ingredients

  • 1 lb (500 g) flour
  • 1 teaspoon salt

Method

Warm a mixing bowl and sift in the flour and salt. Make a well in the centre. Heat the lard in the milk and water until just boiling. Pour into the well in the flour and stir quickly with a wooden spoon until thick. Continue working by hand to a smooth dough. Use now in your recipe as directed.
