  • Marrow from 4 marrow bones
  • Salt and pepper
  • 1 tablespoon chopped parsley
  • 1 shallot, very finely chopped
  • 4 slices hot dry toast


Remove all the marrow from the bones, cut into pieces about ½ in. (1 cm) square and cook for 1 minute in boiling salted water. Drain, season with salt and pepper, and add the parsley and shallot, mixing all together lightly. Serve hot on the toast.
