Method

Proceed as for Sardines on Toast, but before grilling spread each fish on both sides with a little paste made by combining 2 teaspoons of mustard, a pinch each of cayenne pepper, paprika and turmeric, 1 tablespoon of lemon juice and a walnut-sized piece of softened butter.
