Make some anchovy butter by working ½ teaspoon of anchovy essence or 2 pounded tinned anchovy fillets into 2 oz (50 g) butter with a pinch of cayenne pepper. Spread this on the toast fingers instead of plain butter and top each one with 3 anchovy fillets, laid lengthways. Just before serving, place under a medium-hot grill for 3 minutes.
