Place the apples in a pan with the garlic and a small amount of water and cook, covered, until soft.
Add half the vinegar, and all the other ingredients. Bring to the boil, stirring until the sugar has dissolved, then cook, uncovered, until beginning to thicken. Add the remaining vinegar and continue cooking until the desired consistency is reached. Pour into warmed sterilised jars, cov
