This is another typical Thai dish—very light and spicy and very simple. Bird chiles are the very small, very hot chiles. If you prefer, you could substitute larger chiles, cut into very fine strips.
Mix together the chicken, fish sauce, and lime juice.
Add the shallot, scallions, cilantro, and chiles and mix well.
Serve garnished with the mint leaves.
