The people of Goa add vinegar to lots of their dishes, giving them a distinctive flavor. This is a fairly hot dish—adjust the chiles to your taste.

Ingredients

  • 2 lb 4 oz/1 kg stewing or braising beef, cut into 1 inch/2.5 cm cubes
  • vegeta

Method

Heat some vegetable oil in a large skillet and stir-fry the onions, tomatoes, green chiles, and cilantro leaves for 5 minutes.

Add the red chiles, peppercorn mixture, ginger, cumin seeds, and turmeric powder and stir-fry for about 2 minutes.
