Pork really takes up the flavor of any marinade—in this case, soy sauce and pepper. Here, it’s then simmered with ginger, onion, and garlic to provide a mildly spiced curry.


  • 2 lb 4 oz/1 kg shoulder or leg of pork, cut into bite-size pieces


Put the pork into a bowl with 2 tablespoons of the soy sauce and plenty of black pepper and let marinate for 2 hours in the refrigerator, or 1 hour at room temperature.
