This is really just a variation on standard meat loaf, but the addition of the fish sauce and chiles really does make a plain dish a little unusual.


  • 1 lb 2 oz/500 g ground pork

Preheat the oven to 375°F/190°C. Put all the ingredients except the eggs into a large mixing bowl and mix very well together.

Make a well in the middle of the mixture and break in 3 of the eggs, then, using your hands, thoroughly combine the eggs with the pork mixture.
