A very quick, simple, spicy dish that is ideal to pop onto the middle of the table and share with friends. However, as with all dishes containing mussels, do discard any that have not opened after cooking—or else!
Heat some vegetable oil in a large pan and sauté the onion until soft. Then add the garlic, ginger, chiles, and spices and cook for 2-3 minutes, stirring all the while.
Add the mussels, with no liquid, and stir into the pot, making sure they are all covered with the mixture.
