Okra, or ladies’ fingers, are a delicious vegetable, now widely available. They are wonderful in curries, but be aware when you cook them that they initially appear to go rather sticky—don’t panic! As they cook, the stickiness goes.
Heat a little vegetable oil in a pan. Add the garam masala powder and stir-fry for a few seconds until the aroma is released, then add the okra. Cook for about 5 minutes, stirring, then add the ginger, turmeric, chile, and salt to taste. Stir-fry for about another minute.
Add a little water to moisten, then cook gently, stirring occasionally, until the okra is cooked.
