This is a really refreshing salad with a bit of a kick in the tail. It can be served on its own or with fishcakes or rissoles.

Ingredients

  • ½ firm white cabbage, shredded
  • 2 carrots, peeled and grated
  • 2 scallions, cut into very fine strips

Method

Mix all the salad ingredients together in a large bowl.

Mix all the dressing ingredients together thoroughly in a bowl.

Pour the dressing onto the salad and toss together, then serve.
