This makes a change from plain rice as an accompaniment. It is a bit more substantial.


  • generous ¾ cup green lentils
  • cups long-grain rice, washed under cold running water until the wat


Put the lentils and rice into a large bowl and soak in cold water for 2 hours.

Heat the ghee butter in a skillet and gently cook the onion and garlic until they are soft.

Add the spices and seasonings and stir-fry for 3-4 minutes.
