This is quite a hot rice dish, and the coconut adds a great texture to the finished item. Coconut rice is good with grilled fish or meat.


  • cups basmati rice, soaked for 15 minutes
  • 150 g/5 oz grated fresh coconut


Wash the soaked rice under lots of cold running water until the water runs clear and drain.

Boil the rice in plenty of salted water for about 7 minutes, then drain and place in a dish to dry out.

Toast the coconut in a dry skillet until golden brown.
