This is not the fried rice we know and love from the local restaurant. The flavors really come through!

Ingredients

  • scant 1 cup basmati rice, washed under cold running water until the water runs clear, then soaked for 30 minutes
  • vegetable oil, for frying

Method

Drain the rice and reserve the soaking water. Put both to one side.

Heat some vegetable oil in a skillet and stir-fry the onions until they are just soft, then add all the remaining ingredients and continue sautéeing to release the flavor of the spices.

Add the rice to the pan and stir-fry for about 2 minutes, or until the rice is well coated with the flavorings.
