Ingredients

  • onions
  • aubergines
  • tomatoes
  • peppers
  • courgettes
  • olive oil
  • dried herbs such as thyme and rosemary
  • sea salt and black pepper

Method

Slice the vegetables into pieces of the same size, except for the tomatoes which should be cut in half. Thread on skewers in a colourful manner and then marinate in olive oil and dried herbs for about an hour. Place on the barbecue and cook, turning occasionally, until tender. Season with salt and pepper.
